Almost potato salad recipe


This great summer salad replaces carb-heavy potatoes with cauliflower for a delicious side dish that is full of nutrition. One cup of cauliflower has only 27 calories and 5 grams of carbs. It’s an excellent source of vitamin C and also serves up vitamin A, vitamin B-complex, vitamin E, protein, iron, calcium, potassium, phosphorus, magnesium, and dietary fiber. So enjoy this healthy salad and be happy!

  • 2 cups Cauliflower- steamed until just tender
  • 3 Hard boiled eggs- cooled and shells removed
  • 1/4 cup Chopped onions
  • 1/3 cup Fat Free Mayonnaise
  • 1/3 cup Miracle Whip Free
  • 1 teaspoon Yellow mustard
  • Dash Paprika


Chop the steamed and cooled cauliflower the size you would chop potato pieces for your salad. Finely dice the hard boiled eggs and add to the cauliflower. Stir in the chopped onions.

Gently mix in the fat free mayonnaise, Miracle Whip and mustard. Add salt and pepper to taste.

Sprinkle with paprika for color and garnish with parsley if desired.

Number of Servings: Makes eight 1/2 cup servings

Each Serving 0.4 proteins and 0.3 tsp of sugar
