Pumpkin Muffins

Heavenly Pumpkin Muffins

2 cups Fiber One cereal (will be 1 cup when ground)
½ cup ProWhey Protein Powder*
½ tsp sea salt
1 ½ Tbsp pumpkin pie spice
1 tsp baking soda
1 tsp baking powder
1 egg
2 egg whites
1 Tbsp olive oil
1 tsp olive oil
½ cup truvia or stevia
1¼ cups pure pumpkin
¼ cup water

1. Preheat oven to 350 degrees

2. In a food processor grind Fiber One cereal until fine consistency. Combine ground cereal, whey powder, sea salt, pumpkin spice, baking soda, baking powder, and stevia/truvia in a bowl and set aside.

3. Combine egg, egg whites, olive oil and pumpkin in a large bowl. Gradually add dry mixture and mix until all ingredients are blended.

4. Spray a muffin pan with nonstick spray (can use butter flavored). Pour mixture into muffin pan and divide evenly into muffin pan. Bake for 30 minutes. Remove from oven and let cool.


*You can purchase Pro Whey protein powder from Dr. Lara’s Healthy Essentials Shop, or use your choice of vanilla whey powder.

Each Serving =.75 tsp of sugar and 1 protein
