Orange Dreamsicle Parfait
1 package sugar free vanilla pudding (cooking version)
2 cups water
1 package sugar free orange JELL-O
1 tsp orange extract
2 tablespoons of sugar free cool whip
1/2 can mandarin oranges w/ Splenda
Drain Mandarin oranges and layer bottom of pie dish. In a sauce pan cook pudding mix with 2 cups of water on medium heat. Bring to a boil until thickened. Remove from heat and add JELL-O mix. Let cool for 5 minutes and add orange extract. Whip mixture with whisk then add cool whip. Pour mix over oranges and refrigerate for 2-4 hours.
May layer with sugar free cool whip to create parfait.
8 servings- each serving 1.2 tsp of sugar
