Lemon Pepper Salmon with a Side Salad

A simple and tasty fish meal can be difficult to find but this recipe allows you to make your own healthy meal. This Lemon Pepper Salmon with a side salad recipe is easy to make. The lemon and fresh herbs bring a fresh taste to the meal which is perfect for your healthy weight loss plan.

Ingredients:

  • 3 oz salmon
  • ½ teaspoons of Black pepper
  • 3 teaspoons of fresh lemon juice
  • 2 teaspoons of olive oil
  • 2 cloves of garlic, minced
  • Fresh thyme to taste
  • Fresh parsley to taste
  • Side Salad:
  • 1/2 cup lettuce
  • 1/2 cup cherry tomatoes
  • 1/2 cup cucumber
  • 3 tablespoons of olive oil
  • 1 tablespoon of white wine vinegar
  • ½ tablespoon of fresh lemon juice
  • 1 garlic clove, minced (optional)
  • 1 tablespoon chopped parsley
  • 1 tablespoon of dried basil
  • 1 tablespoon of dried oregano

Instructions:

  1. Preheat oven
    Preheat oven to 400°F.
  2. Prepare salmon
    Line pan with parchment paper and spray with cooking spray and add salmon pieces.
  3. Coat salmon with flavor
    Mix together the black pepper, fresh lemon juice, olive oil, garlic, thyme, and parsley. Coat the salmon with the mixture.
  4. Bake salmon
    Bake the salmon for 12-14 minutes or until fully cooked. Optional - for the last 2 minutes switch oven to broil, that will add some color to the salmon! Once salmon is ready, serve with the recommended side salad. Or, serve with some fresh thyme and parsley and if wanted, add a couple of lemon slices to the plate.
  5. To Make the Side Salad
    Put all of the ingredients into a bowl. Mix well Enjoy!
