These are the best Blueberry Muffins for weight loss because they use monk fruit allulose blend, a sugar substitute from the grocery store. The other ingredients, like coconut oil, almond flour, and almond milk, make these muffins delicious, vegan, and easy to prepare.

Ingredients:

  • 2 ½ Cup blanched almond flour (or any other almond flour)
  • ½ Cup monk fruit allulose blend
  • 1 ½ tsp baking powder
  • ¼ tsp Sea salt
  • 1/3 Cup coconut oil
  • 1/3 Cup unsweetened almond milk
  • 3 Large eggs
  • ½ tsp Vanilla extract
  • ¾ Cup blueberries

Instructions:

  1. Preheat oven
    Preheat the oven to 350 degrees F.
  2. Line muffin pan
    Line a muffin pan with 12 silicone or parchment paper muffin liners.
  3. Mix dry ingredients.
    In a large bowl, stir together the almond flour, monk fruit sweetener, baking powder, and sea salt.
  4. Mix wet ingredients.
    Mix the melted coconut oil, almond milk, eggs, and vanilla extract. Fold in blueberries.
  5. Bake
    Distribute batter evenly among muffin cups. Bake for about 20-25 minutes, until the top is golden and inserted toothpick comes out clean.
