Vanilla Panna Cotta

Yield: 4 servings; ½ cup serving = 1.6 tsp sugar

Ingredients:

  • 2 teaspoons unflavored powdered gelatin water
  • 2 cups heavy whipping cream
  • 1 tablespoon vanilla extract
  • Pomegranate seeds and fresh mint for garnish (optional)

Instructions:

  1. Mix
    Mix the powdered gelatin with cold water, about 1 tablespoon water per teaspoon gelatin powder, but check the instructions for your specific brand. Set aside.
  2. Add ingredients
    Add heavy cream and vanilla extract to a saucepan and bring to a boil over medium heat. Lower the heat and let simmer for a couple of minutes on medium-low heat until the cream begins to thicken.
  3. Remove from heat
    Remove the cream from the heat and add the gelatin. Stir until the gelatin has dissolved completely.
  4. Cool
    Divide cream into ½ cup servings and pour into serving glasses. Allow to cool completely before covering with plastic wrap and placing in the fridge to cool at least 3 hours or overnight.
  5. Prepare to serve
    Remove from the fridge half an hour before serving garnish with pomegranate and mint (optional) enjoy!
