Ingredients

  • 12 oz raw shrimp, peeled and deveined
  • 2 medium zucchini, spiralized or peeled into ribbons
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • Juice of 1 lemon
  • Zest of ½ lemon
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley to garnish

Instructions

  1. Prep zucchini. Spiralize or ribbon zucchini. Lightly salt and let sit in a colander for 5 minutes to release moisture. Pat dry with paper towels.
  2. Cook shrimp. Heat olive oil in a large skillet over medium-high heat. Add garlic and sauté 30 seconds. Add shrimp in a single layer and cook 2 minutes per side until pink and opaque. Season with salt, pepper, and red pepper flakes.
  3. Add lemon. Squeeze lemon juice over shrimp and add zest. Toss to coat.
  4. Add zucchini. Remove pan from heat and toss in zucchini noodles. Residual heat warms the noodles without overcooking them.
  5. Serve immediately. Garnish with fresh parsley and extra lemon.
