Ingredients:

  • 12 oz cubed butternut squash
  • 4 slices bacon cut in half (omit for vegetarian side dish)
  • 3 cloves garlic thinly sliced
  • 2 tablespoons brown sweeter like Swerve
  • 2 teaspoons olive oil
  • 1 teaspoon Dijon mustard
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon garlic powder

Instructions:

  1. Preheat and place in skillet
    Preheat oven to 425° F. Place the butternut squash, chopped bacon, and sliced garlic in a large 10.5” cast iron skillet.
  2. Season
    In a small bowl mix together the sweetener, olive oil, mustard, salt, and garlic powder. Sprinkle over the squash and transfer to the oven.
  3. Bake
    Bake for 45 minutes until the bacon is crispy and the squash is tender. Serve immediately.
