Berry French Toast

By using a keto-friendly bread, this Berry French Toast feels like a treat, but it won't spike your insulin level. Each serving has 2 proteins and 2 tsp of sugar to help you along your weight loss journey. It's easy to make and can be "just for you" or the entire family. This recipe makes two servings.

Ingredients:

  • 3 large eggs
  • 4 slices keto-friendly bread (we used Arnold)
  • ½ cup 2% milk
  • 1/2 teaspoon ground cinnamon
  • pinch salt butter for cooking
  • ¼ cup Blueberries
  • ¼ cup Strawberries

Instructions:

  1. Prepare egg mixture.
    In a medium bowl, whisk together the eggs, milk, cinnamon and salt. Pour into a large casserole dish.
  2. Prepare fruit topping.
    Muddle berries and set aside for French toast topping.
  3. Cook over heated skillet.
    In a large skillet, melt about 1-2 tablespoons butter over medium heat. While butter is melting, dip a few pieces (however many can fit in your skillet) in the milk mixture for 3 seconds per side. Place in the skillet and cook for 3-4 minutes per side until golden brown.
  4. Top with berries and enjoy!
    Top with muddled berries and keto Reddi-Whip and enjoy!
