This Blue Chicken Salad is not your traditional salad. Blue cheese, nuts, and strawberries mix together to create a delicious salad with a crunchy texture. You will have 3.5 proteins and 1.2 tsp of sugar per serving. But this salad can easily handle additional protein, like sunflower seeds. Or you can omit the chicken and use the sunflower seeds only. It's the perfect compliment to your weight loss journey.

Ingredients:

  • Baby spinach and romaine mix
  • 3 oz grilled chicken breast (pre-cooked)
  • ¼ cup blue cheese crumbles
  • ¼ cup sliced strawberries
  • ¼ cup pecans
  • ½ cup cherry tomatoes
  • *add dressing for additional flavor and/or protein (¼ cup sunflower seeds)

Instructions:

  1. Mix and toss
    In medium bowl assemble salad and top with your favorite dressing. (pairs well with red wine and vinegar)

    *Top with 1/4 cup sunflower seeds to boost protein or make this salad a vegetarian meal
