Cauliflower Soup is a healthy, easy-to-make starter or meal. Tender cauliflower, broth, and seasonings are combined for a satisfying and nutrient-rich dish. By using a light base and avoiding heavy cream, this soup offers a creamy texture by adding cream cheese and spinach. It's the perfect warm dish or starter to eat while staying healthy.

Yield: 2 Servings of 2 Proteins and 1 sugar per serving

Ingredients:

  • 1 ½ Cups Chicken Broth (or vegetable broth)
  • 1 Head of Cauliflower (cut into small pieces)
  • 1 cup Raw Spinach
  • 1/4 Cup Cream Cheese
  • 1/2 Cup Diced Onion
  • 2 Tbsp Butter
  • 1 Tbsp Minced Garlic
  • 1/2 Pound Cooked Crumbled Bacon (for topping)
  • Salt & Pepper to taste

Instructions:

  1. Sauté
    In a large pot, sauté the butter and onions until clear. Add the minced garlic and sauté for an additional minute.
  2. Simmer
    Add the chicken broth, seasoning, and cauliflower to the pot and simmer for about 15 minutes or until the cauliflower is tender.
  3. Blend
    Carefully pour half or more of the mixture (along with the spinach) into a blender and pulse a few times until creamy.
  4. Simmer
    Place back on the heat; add the cream cheese and about a cup of water or more chicken broth (depending on your consistency preference). Simmer for 10-15 minutes or until the cream cheese is melted and blended nicely. Top with crumbled bacon and enjoy! Feel free to add a little shredded cheddar cheese as well.
