Ingredients:

  • 2 large Portabella mushrooms
  • 1 cup of reduced-fat mozarella cheese
  • 3 chopped green onions (scallions)
  • 2 tbsps lemon juice
  • 2 tbsps extra virgin olive oil
  • 1 clove of crushed garlic
  • ½ of a diced red bell pepper
  • ¼ tsp of salt
  • ¼ tsp of black pepper
  • 1 tsp of freshly chopped basil
  • optional: crushed red pepper

Instructions:

  1. Clean mushrooms
    With a spoon, scrape the gills out of the mushroom caps until the underside is mostly clean.
  2. Prepare for baking
    Place the mushroom caps on a foil-lined rimmed baking sheet.
  3. Whisk
    Whisk together the olive oil, lemon juice, garlic.
  4. Brush mushrooms
    Brush mushroom caps inside and out with the olive oil mixture.
  5. Season mushrooms
    Sprinkle caps evenly with salt and pepper.
  6. Preheat boiler
    Preheat the broiler. Broil the mushrooms for 3-5 minutes until they are hot and the edges are starting to brown. They will start to release moisture and get juicy. Remove from the oven.
  7. Preheat oven
    Preheat the oven to 375.
  8. Fill caps and season
    Fill the caps with the red bell pepper, cheese, and onion. Sprinkle with fresh basil.
  9. Bake and serve
    Bake for 12 minutes or until hot and the cheese has softened. Sprinkle with red pepper flakes to taste and enjoy!
