Ingredients:

  • 12 oz. Boneless Chicken Breasts
  • 3 Cups Riced Cauliflower
  • 3 Tbsps. Butter buds
  • Sea salt to taste
  • Black pepper to taste
  • ¾ Cups Scallions
  • 3 Cloves of Minced Garlic
  • ¼ Cup Diced Carrots
  • ¼ Cup Green peas (fresh or frozen)
  • 2 Large Eggs
  • 1 Tsp. Sesame Oil

Instructions:

  1. Sauté chicken
    In a large sauté pan, heat one tablespoon of butter buds over medium heat. Add the chicken pieces and season with salt and pepper. Sauté until cooked through. Set aside.
  2. Sauté vegetables
    Return the pan to medium-high heat and add the remaining butter buds. Add the onion, garlic, and carrots. Sauté for 4 minutes. Add the peas and sauté for another minute.
  3. Whisk eggs
    In a bowl, whisk the eggs together.
  4. Cook eggs
    Push the vegetables to the side of the pan and add the eggs in the center. Cook until barely scrambled.
  5. Combine all
    Add the cauliflower rice and chicken back into the pan. Add the sesame oil and sauté for 5 minutes, until the cauliflower is soft, not mushy. Turn the heat down. Season with salt and pepper to taste. Serve and enjoy!
  6. Tip
    You can use rotisserie chicken and frozen vegetables to save on cooing time.
