Chipotle Beef Barbacoa

Ingredients:

  • 2-3 lbs Beef brisket or chuck roast
  • ½ Cup beef broth
  • 2 Medium chipotle chiles in adobo
  • 5 Cloves of garlic minced
  • 2 tbsp Apple cider vinegar
  • 2 tbsp Lime juice
  • 1 tbsp Dried oregano
  • 2 tsp Cumin
  • 2 tsp Sea salt
  • 1 tsp Black pepper
  • ½ tsp Ground cloves (optional)
  • 2 Whole bay leaves

Instructions:

  1. Combine herbs and spices
    Combine the broth, chiles, garlic, apple cider vingegar, lime juice, oregano, cumin, sea salt, black pepper, and ground cloves in blender. Puree until smooth.
  2. Combine
    Place beef chunks in slow cooker. Pour puree mix on top and add bay leaves.
  3. Slow cook
    Cook for 4-6 hours on high or 8-10 on low.
  4. Rest beef
    Remove bay leaves. Shred meat and stir into the juices.  Cover and rest 5-10 minutes.  Allow beef to absorb more flavor.
