These Crustless Mini Quiches are packed full of nutritious vegetables. Enjoy a mini quiche knowing it has 1.5 protein and 0.5 tsp sugar in line with your healthy weight loss program.

Ingredients:

  • 1 cup chopped broccoli
  • 1/2 cup chopped white onion
  • 1/2 cup chopped portabella mushroom
  • 12 eggs or 3 cups egg substitute
  • salt and pepper to taste
  • 2 tomatoes sliced or chopped
  • 1/4 cup low fat shredded cheese
  • non-stick cooking spray

Instructions:

  1. Preheat oven
    Preheat oven to 325 degrees.
  2. Prepare muffin pan
    Spray a 12-cup muffin pan with non-stick spray, set aside.
  3. Saute veggies
    Saute vegetables with olive oil for 5 minutes
  4. Fill pan with veggies and eggs
    Filling each cup 3/4 full add vegetable mix to muffin cups, top with whisked eggs.
  5. Bake
    Bake for 20 minutes.
  6. Prepare to broil
    Remove pan from oven and set the oven to broil.
  7. Broil and enjoy
    Top each quiche with tomato and a sprinkle of cheese. Place under broiler for 2 minutes until cheese melts. Enjoy!
