- 1 cup chopped broccoli
- 1/2 cup chopped white onion
- 1/2 cup chopped portabella mushroom
- 12 eggs or 3 cups egg substitute
- salt and pepper to taste
- 2 tomatoes sliced or chopped
- 1/4 cup low fat shredded cheese
- non-stick cooking spray
- Preheat oven
Preheat oven to 325 degrees.
- Prepare muffin pan
Spray a 12-cup muffin pan with non-stick spray, set aside.
- Saute veggies
Saute vegetables with olive oil for 5 minutes
- Fill pan with veggies and eggs
Filling each cup 3/4 full add vegetable mix to muffin cups, top with whisked eggs.
Bake for 20 minutes.
- Prepare to broil
Remove pan from oven and set the oven to broil.
- Broil and enjoy
Top each quiche with tomato and a sprinkle of cheese. Place under broiler for 2 minutes until cheese melts. Enjoy!
