This healthy Greek meatball salad recipe tastes great and is easy to make. It's a lunch or main dish that will keep you on track while you're on your weight loss program. You can also make the meatballs smaller and serve them as an appetizer or side dish.

Ingredients:

  • 1 lb lean ground beef or turkey
  • 2 teaspoons dried oregano
  • 1/4 cup mint, finely chopped
  • 2 cloves garlic, peeled and minced
  • Salt and pepper, to taste
  • 4 Tablespoons olive oil
  • For the salad:
  • 1 tomato, cut into wedges
  • A few lettuce leaves
  • 1 lemon, cut into wedges
  • 1/4 cup flat-leaf parsley, chopped

Instructions:

  1. Preheat
    Preheat oven to 350 F.
  2. Combine
    Mix the ground lamb with the dried oregano, mint, garlic, salt, and pepper.
  3. Form meatballs
    Form small meatballs from the mixture.
  4. Fry
    Add olive oil to a large pan and fry the meatballs in batches until browned.
  5. Bake
    Transfer to a lined baking tray and bake in the oven for 10 minutes to ensure the center of the meatballs cook through.
  6. Serve
    Serve the meatballs over a salad made of lettuce and tomato wedges.
  7. Garnish
    Generously squeeze the lemon over everything and garnish the salad with chopped parsley.
