Ingredients:

  • 2 cups Cauliflower- steamed until just tender
  • 3 Hard-boiled eggs- cooled and shells removed
  • 1/4 cup Chopped onions
  • 1/3 cup Fat-Free Mayonnaise
  • 1/3 cup Miracle Whip Free
  • 1 teaspoon yellow mustard
  • Dash Smoked Paprika

Instructions:

  1. Chop
    Chop the steamed and cooled cauliflower the size you would chop potato pieces for your salad.
  2. Dice and Combine
    Finely dice the hard-boiled eggs and add to the cauliflower.
  3. Stir in onions
    Stir in the chopped onions.
  4. Mix
    Gently mix in the fat-free mayonnaise, Miracle Whip and mustard.
  5. Salt & Pepper
    Add salt and pepper to taste.
  6. Sprinkle
    Sprinkle your cauliflower potato salad with paprika for color and garnish with parsley if desired.
