- 2 cups Cauliflower- steamed until just tender
- 3 Hard-boiled eggs- cooled and shells removed
- 1/4 cup Chopped onions
- 1/3 cup Fat-Free Mayonnaise
- 1/3 cup Miracle Whip Free
- 1 teaspoon yellow mustard
- Dash Smoked Paprika
Chop the steamed and cooled cauliflower the size you would chop potato pieces for your salad.
- Dice and Combine
Finely dice the hard-boiled eggs and add to the cauliflower.
- Stir in onions
Stir in the chopped onions.
Gently mix in the fat-free mayonnaise, Miracle Whip and mustard.
- Salt & Pepper
Add salt and pepper to taste.
Sprinkle your cauliflower potato salad with paprika for color and garnish with parsley if desired.
