Ingredients:

  • For the Meatballs: 4 servings- each serving 4 proteins and 1.6 tsp of sugar
  • 1 lb lean ground turkey
  • 1/4 cup finely chopped onion
  • 1/4 cup almond flour or oat flour
  • 1 egg, beaten
  • 1 tbsp fresh parsley, chopped
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • For the Cranberry Glaze:
  • 1 cup fresh or frozen cranberries
  • 1/4 cup 100% orange juice (no added sugar)
  • 1 tbsp honey or maple syrup
  • 1/4 tsp cinnamon
  • Pinch of salt

Instructions:

  1. Prepare the Meatballs:
    Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. In a large bowl, combine ground turkey, onion, almond flour, egg, parsley, garlic powder, smoked paprika, salt, and pepper. Mix until just combined. Form the mixture into small meatballs (about 1 inch in diameter) and place them on the prepared baking sheet. Bake for 15-20 minutes or until the meatballs are cooked through and lightly browned.
  2. Make the Cranberry Glaze:
    While the meatballs bake, combine cranberries, orange juice, honey, cinnamon, and salt in a small saucepan. Bring to a boil, then reduce heat to low and simmer for 10-15 minutes, stirring occasionally, until the cranberries burst and the mixture thickens. Use an immersion blender or mash the cranberries with a spoon for a smoother glaze, if desired.
  3. Combine and Serve:
    Toss the cooked meatballs in the cranberry glaze until evenly coated. Transfer to a serving platter and garnish with extra parsley for a festive touch.
