Shrimp is one of the leanest proteins on the Awakening Program — zero fat, zero sugar — and zucchini is a free vegetable, which means this entire meal costs you almost nothing on your daily sugar budget. It's ready in 20 minutes and is exactly the kind of light, no-heavy-sauce dinner that makes hot Tampa Bay summers easier to navigate.
Prep Time: 10 minutes | Cook Time: 10 minutes | Total Time: 20 minutes Yield: 2 servings Categories: Lunch, Dinner, Seafood Per Serving: 4 protein servings | 0.6 tsp sugar
Ingredients
- 12 oz raw shrimp, peeled and deveined
- 2 medium zucchini, spiralized or peeled into ribbons
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- Juice of 1 lemon
- Zest of ½ lemon
- ¼ teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Fresh parsley to garnish
Instructions
- Prep zucchini. Spiralize or ribbon zucchini. Lightly salt and let sit in a colander for 5 minutes to release moisture. Pat dry with paper towels.
- Cook shrimp. Heat olive oil in a large skillet over medium-high heat. Add garlic and sauté 30 seconds. Add shrimp in a single layer and cook 2 minutes per side until pink and opaque. Season with salt, pepper, and red pepper flakes.
- Add lemon. Squeeze lemon juice over shrimp and add zest. Toss to coat.
- Add zucchini. Remove pan from heat and toss in zucchini noodles. Residual heat warms the noodles without overcooking them.
- Serve immediately. Garnish with fresh parsley and extra lemon.
