Mini Pizza Cauliflower Crusts

These easy to make cauliflower pizza crusts are healthier than your normal pizza meal.

Your favorite meal, pizza, is healthier when you make these mini pizza cauliflower crusts. Make an individual pizza for yourself or the entire family. You can eat this pizza while sticking to your weight loss program. 1 pizza is 1 serving = 4 proteins and 0.1 tsp sugar

Ingredients:

  • 2 cups fresh cauliflower, steamed, drained and priced
  • 2 large pasture-raised eggs
  • 2 cups reduced-fat cheddar cheese
  • 1 tsp. toasted and ground fennel
  • 1/4 tsp of salt
  • 1 tsp. ground oregano
  • 2 tsp. dried parsley
  • 2 tsp dried basil
  • 1 tsp dried rosemary
  • 2 cloves of garlic

Instructions:

  1. Steam and squeeze
    For the mini pizza crusts, steam the cauliflower and thoroughly squeeze out the liquid using cheesecloth.
  2. Rice
    Next rice or finely chop it (You can do this in a food processor a few pieces at a time).
  3. Mix
    In a bowl, beat the egg then add the cauliflower and shredded cheese.
  4. Press
    Mix, then press down large spoonfuls onto a parchment paper covered cookie sheet.
  5. Bake
    Sprinkle with the spices and bake at 450 degrees for 8 to 10 minutes. Keep the oven on.
  6. Make pizza
    To complete the pizza, add desired pizza sauce (or a slice of fresh tomato) or pesto and then add toppings like grass-fed meat, olives, chopped mushrooms, etc. Put back in the oven until cheese is melted for completed mini pizzas! Nutrition information is just for the pizza crust.
