Crepes are very thin pancakes filled with sweet or savory fillings. Our Pecan Crepes recipe makes 4 crepes with the added benefit of vitamin-packed pecans. If possible, use organic pecans. Enjoy 1 or 2 crepes knowing 1 crepe = 1 serving of protein and 0.6 tsp sugar while you're on the Awakening Program.


Recipe

Total Time: 12 mins

Ingredients:

  • 1/4 cup almond flour
  • 4 eggs
  • ¼ tsp pumpkin spice
  • 1-2 tsp Stevia/ Truvia
  • Splash of vanilla
  • Zero-sugar whipped cream
  • ½ cup pecans
  • 1 Tbsp coconut oil

Instructions:

  1. Whisk ingredients
    Add all ingredients together and whisk.
  2. Heat pan
    Heat coconut oil in small pan over medium heat.
  3. Cook crepes
    Pour just under 1/4 cup of the mix into heated pan and tilt pan in a circular motion to ensure it makes a decent circle about 8-9 inch crepe. Cook until lightly brown approximately 2 minutes each side.
  4. Add pecans
    Top crepes with pecans and whipped cream, enjoy!
