Sautéed Shrimp

One serving of sautéed shrimp = 4 proteins and 0.5 tsp sugar in this easy and healthy seafood meal.

Sautéed shrimp are a super easy appetizer or quick-and-easy seafood meal. These shrimp are bought mostly prepared so it only takes 15 minutes to cook and serve. Add a little seafood to your meals while you're on a weight loss program.

Ingredients:

  • 4 tsp olive oil
  • 1/4 lbs medium raw shrimp, peeled and deveined (tails on)
  • 6-8 garlic cloves, minced
  • 1/2 cup low sodium chicken broth
  • 1/2 cup dry white wine
  • 1/4 cup fresh lemon juice
  • 1/4 cup + 1 tbsp minced parsley
  • 1/4 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 4 lemon wedges

Instructions:

  1. Heat oil
    In a large nonstick, skillet heat the oil.
  2. Saute
    Sauté the shrimp until just pink, about 2-3 minutes. Add the garlic and cook stirring constantly about 30 seconds. With a slotted spoon transfer the shrimp to a platter and keep them warm.
  3. Combine sauce
    In the skillet, combine the broth, wine, lemon juice, 1/4 cup of the parsley, salt and pepper; and bring to a boil. Boil uncovered until the sauce is reduced by half. Spoon the sauce over the shrimp.
  4. Serve
    Serve garnished with the lemon wedges and sprinkled with the remaining tbsp of parsley.
