Ingredients:

  • 2 Eggs
  • 1 oz mozzarella cheese
  • ¼ cup diced peppers
  • Scallion to garnish

Instructions:

  1. Whisk eggs
    Whisk eggs salt and pepper together, oil pan and place over medium heat.
  2. Cook omelet
    Add eggs to pan, when almost set, top with cheese and peppers and fold in half. Garnish with scallions and enjoy!
