  • 1 medium spaghetti squash
  • 1/2 cup white onion, chopped
  • 1/2 cup low fat sour cream
  • 1 1/2 cup 2% shredded cheddar cheese
  • 2 tablespoons olive oil


  1. Deseed
    Cut spaghetti squash in half and clean out the seeds.
  2. Mircowave
    Place in a microwave-safe bowl, with 1/4 inch water. Cover and cook in the microwave for 10-12 minutes.
  3. Saute
    Meanwhile, saute onions in a small pan sprayed with olive oil.
  4. Scrape and combine all
    Over a medium-sized bowl take the spaghetti squash and scrape out the insides with fork. Add onions, sour cream, and 1 cup of cheese, mix well.
  5. Prepare for baking
    Pour into a small cake pan and top with the remaining 1/2 cup of cheese.
  6. Bake
    Bake at 350 degrees for 30 minutes.
