Crepes are very thin pancakes filled with sweet or savory fillings. Our Strawberry Crepes recipe makes 4 crepes and highlights the fresh sweet, and tart taste of strawberries. Buy your strawberries at the local farmers market if you can. Strawberry season typically starts in April and lasts for several weeks. Enjoy 1 or 2 crepes knowing 1 crepe = 1 serving of protein and 0.6 tsp sugar while you're on the Awakening Program.

- ¼ cup almond flour
- 4 eggs
- ¼ tsp ground cinnamon
- 1-2 tsp of Stevia/ Truvia
- Splash of vanilla
- Zero-sugar whipped cream
- 1 cup strawberries sliced
- 1 Tbsp coconut oil to grease the pan
- Whisk ingredients
Add all ingredients together and whisk.
- Prepare pan
Heat coconut oil in a small pan over medium heat.
Pour just under 1/4 cup of the mix into the heated pan and tilt the pan in a circular motion to ensure it makes a decent circle about 8-9 inch crepe. Cook until lightly brown approximately 2 minutes on each side.
- Top with strawberries
Top crepes with strawberries and whipped cream, enjoy!
