- 2 boneless chicken breast sliced
- 1 tbsp. cumin
- 1 tsp. garlic powder
- 4 tbsp. extra-virgin olive oil
- 1 red bell pepper sliced
- 1 green bell pepper sliced
- 1 yellow onion sliced
- salt and pepper to taste
In a bowl, mix cumin and garlic powder and also cut the chicken into strips.
- Coat chicken
Coat chicken in 1 tbsp of olive oil and roll in the cumin garlic mixture.
Marinate the chicken for 30 minutes in the fridge.
- Saute vegetables
Heat the remaining olive oil in an iron skillet over medium heat, and sauté bell peppers and onions.
- Saute chicken
Remove veggies from the pan but do not clean the pan. Add and sauté chicken until done.
- Prepare to serve
Top the chicken with the veggies and serve.
