Tossed with a zesty vinaigrette, each bite offers a crisp and satisfying experience, perfect for fueling your weight loss and wellness journey.

Ingredients:

  • 1.5 pounds zucchini, spiralized (about 6 cups)
  • 2 cups grape tomatoes
  • 1 Cup mozzarella (we recommend mozzarella pearls)
  • 1 Cup summer sausage, diced small (you can also use pepperoni or salami, if preferred)*
  • *Substitute tofu to make a vegetarian salad
  • 1/4 Cup Peppadew or pepperoncini peppers, finely diced
  • 4-5 Fresh basil leaves, cut into ribbons
  • To make the Balsamic Vinaigrette, you will need:
  • 1/2 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1 garlic clove, grated
  • Chef’s Tip: you can adjust the amounts of oil and vinegar to suit your own tastes.

Instructions:

  1. Spiralize
    You will first want to spiralize the zucchini. You can use a hand-held spiralizer or an electric one. You can also buy spiralized zucchini, also known as zoodles, in the produce section of some grocery stores. Frozen zucchini is not recommended for this recipe.
  2. Dice & Cut Ribbons
    Next, dice the summer sausage and peppers, then cut the basil into thin ribbons.
  3. Grate garlic
    Grate the garlic clove for the dressing.
  4. Combine & Serve
    Finally in a large bowl combine the zucchini noodles, tomatoes, mozzarella cheese, summer sausage, and peppers and toss. Add vinaigrette just before eating.
