Ingredients:

  • 2 cups Fiber One cereal (will be 1 cup when ground)
  • ½ cup ProWhey Protein Powder
  • ½ tsp sea salt
  • 1 ½ Tbsp pumpkin pie spice
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 egg
  • 2 egg whites
  • 1 Tbsp olive oil
  • ½ cup Truvia or stevia
  • 1¼ cups pure pumpkin
  • ¼ cup of water

Instructions:

  1. Preheat
    Preheat oven to 350 degrees.
  2. Grind
    In a food processor grind Fiber One cereal until a fine consistency.
  3. Combine dry ingredients
    Combine ground cereal, whey powder, sea salt, pumpkin spice, baking soda, baking powder, and stevia/truvia in a bowl and set aside.
  4. Combine wet ingredients
    Combine egg, egg whites, olive oil, and pumpkin in a large bowl.
  5. Blend ingredients
    Gradually add dry mixture and mix until all ingredients are blended.
  6. Spray pan
    Spray a muffin pan with nonstick spray (can use butter flavored).
  7. Pour into pan
    Pour mixture into muffin pan and divide evenly into muffin pan.
  8. Bake
    Bake for 30 minutes.
  9. Cool
    Remove from the oven and let cool.
