Ingredients:

  • 4 poblano chiles, roasted
  • 1 pound lean ground turkey
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 Roma tomato, diced
  • 1 tbsp chili powder
  • salt and black pepper to taste
  • 8 ounces shredded cheddar cheese

Instructions:

  1. Cut the poblano peppers
    Cool, then peel the poblano chili peppers. Very carefully cut around the stem end of each. Pull out the stem and pull the seeds out with your fingers. You can also cut a lengthwise slit, open them flat and scrape out seeds that way.
  2. Brown
    Brown turkey, onion and garlic;drain off any grease.
  3. Stir in
    Stir in tomato, chili powder and half the cheese.
  4. Season
    Season with salt and pepper to taste.
  5. Stuff
    Stuff the poblano chili peppers with the turkey mixture and roll them up. Place cut side down in baking dish and top with remaining cheese.
  6. Bake
    Bake at 350 for 15-20 minutes until cheese is melted and bubbly. Cut each chili pepper in half again. Each piece is 1 serving.
