Stuffed green bell peppers are a healthy and easy-to-make dinner. Taking the extra step to drain the fat from the ground meat will help you continue to succeed in your weight loss program.

- 2 large green peppers, halved lengthwise
- 1 pound lean ground beef
- 1/4 cup onion, chopped
- 1 clove garlic, minced
- 1/2 cup tomato, chopped
- salt and black pepper to taste
- 4 ounces cheddar cheese, shredded
- additional 2 ounces cheddar cheese for topping
- Boil and drain
Boil peppers for 3 minutes; drain.
- Brown meat
In same pot, brown the meat, onion and garlic.
- Drain fat and stir in
Drain the fat and stir in tomatoes and seasonings.
- Remove from heat
Remove from heat and add cheese.
- Fill peppers
Put the bell pepper halves in a lightly coated (cooking spray) 8x8" baking pan and fill with meat mixture.
Sprinkle extra cheese on top of the peppers. Bake at 350 for 20-25 minutes.
