Ingredients:

  • 1 head of cauliflower cut into small florets
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ½ cup sour cream (low-fat)
  • 2 tablespoons heavy cream
  • 1 teaspoon Dijon mustard
  • 1 teaspoon minced garlic
  • 1 cup shredded cheddar
  • 2 tablespoons bacon bits
  • 2 tablespoons sliced scallions

Instructions:

  1. Preheat oven
    Preheat your oven to 425 degrees F. Spray the baking sheet with olive oil spray.
  2. Roast cauliflower
    Place cauliflower florets on the baking sheet. Spray with olive oil lightly. Season with kosher salt and black pepper. Roast cauliflower until tender, approximately 12-15 minutes.
  3. Prepare seasoning
    In a large bowl, mix the sour cream, heavy cream, Dijon mustard, garlic, and ½ cup cheddar.
  4. Combine with sour cream
    Add roasted cauliflower to the sour cream sauce and combine.
  5. Create casserole in dish
    Place cauliflower/sauce mix into a greased 1.5-quart baking dish. Top with ½ cup shredded cheddar and place back in the oven for an additional 10 minutes.
  6. Add bacon bits
    Sprinkle bacon bits and scallions on top and serve.
