  • 1 lb sea scallops, patted dry pinch of salt
  • 1 1/2 tbsp olive oil
  • fresh ground black pepper
  • 3 scallions minced
  • 1/2 cup dry white wine
  • 10 oz bag baby spinach
  • 1 tbsp fresh lemon juice
  • 2 garlic cloves


  1. Prepare the skillet
    Heat oil on medium-high heat in a large heavy skillet.
  2. Add sea scallops
    Add scallops and cook undisturbed for 2 minutes per side.
  3. Remove from heat
    Remove scallops from heat and set aside.
  4. Add scallions
    Add scallions and wine to the skillet, deglaze the pan by scraping bits from the bottom.
  5. Add spinach
    Add spinach and cook for 2 minutes until wilted, add lemon juice.
  6. Remove from heat
    Remove from heat and divide spinach among four plates and top with warm sea scallops.
