Healthy Spinach Quiche

Ingredients:

  • 1 tbsp vegetable oil 1 onion, chopped
  • 1 (10 oz) package frozen spinach, thawed
  • 5 eggs
  • 3/4 lb muenster cheese, grated
  • salt and pepper to taste

Instructions:

  1. Preheat
    Preheat oven to 350 degrees. Spray 9-inch pie pan with Pam. Heat oil in a skillet over medium-high heat.
  2. Saute onion
    Add onion and saute until browned (5 minutes).
  3. Cook spinach
    Add spinach; cook until excess moisture evaporates, let cool.
  4. Combine egg mixture
    Beat eggs in a bowl and add cheese. Stir egg-cheese mixture into the onion-spinach mixture.
  5. Season
    Season to taste with salt and pepper if desired.
  6. Bake
    Pour into pie pan, spread evenly. Bake 40 minutes until top is golden.
