- 2 portabella mushroom caps
- 1 cup spinach
- 2 oz goat cheese
- 1 clove garlic chopped
- 2 tablespoons olive oil
- Sprinkle of panko bread crumbs
- Drizzle of balsamic glaze
- Preheat oven and remove gills.
Heat oven to 350. Remove gills from mushrooms.
Sauté spinach with garlic.
- Rub with olive oil
Rub mushroom with olive oil.
- Stuff mushrooms
Fill caps with goat cheese and spinach.
Bake 20 minutes.
- Sprinkle, glaze and broil
Remove mushrooms and sprinkle with panko and balsamic glaze. Broil for 2 minutes to toast panko.
