A healthier version of lasagna, this Zucchini Noodle Lasagna recipe makes 24 rolls, enough to feed a family. With 1 zucchini lasagna roll = 1.5 protein, 0.3 tsp of sugar it's ideal when you're on a healthy weight loss program.

Ingredients:

  • 1 lb. ground turkey
  • 2 cloves of garlic
  • ½ cup sweet onion
  • 3 zucchinis large
  • 1 egg
  • 1 ½ cup marinara sauce
  • 2 tsp. Italian seasoning
  • 1 tsp. salt (or to taste)
  • 1 tbsp. olive oil
  • 1 ½ cups mozzarella cheese
  • ½ cup parmesan cheese
  • 1 cup ricotta

Instructions:

  1. Preheat
    Preheat oven to 400 degrees.
  2. Cut zucchini.
    Use a mandolin to cut zucchini length wise into 1/8 inch thick slices. Sprinkle zucchini slices with salt and let it set for 30 minutes. Using a paper towel dab zucchini slices to remove excess moisture.
  3. Sauté
    Sauté garlic and onion in oil over medium heat.
  4. Add meat and sauce
    Add the ground turkey and once it is cooked through, add ¾ cup of the marinara sauce and set aside.
  5. Prepare additional ingredients
    In a medium bowl, combine 1 cup of mozzarella, ricotta, parmesan cheese, egg, Italian seasoning, and salt.
  6. Make roll-ups
    Make the roll-ups by adding a layer of the cheese mix (approximately ½ tbsp) to each zucchini slice and then topping with a layer of ground turkey mix (approximately 1 tbsp). Roll slices and pin through with a tooth pick to hold together. Place the zucchini rolls in baking dish top with remaining marinara sauce and mozzarella cheese.
  7. Bake
    Bake for 25-30 minutes. Serve and enjoy!
